This recipe originally comes from Gordon Strong's book Modern Homebrew Recipes. I have modified it slightly to scale it down to my stovetop brew in a bag setup and for ingredients which are readily available to me or that I tend to keep around. The changes include swapping 8.1% AA Target hops for Fuggles, which are generally in the 4% to 4.5% AA range and a yeast change since I use dry yeast to be more cost effective with my small stovetop batches.
English Dark Mild ales are quickly becoming one of my favorites, with Ballad Brewing's Fast Mail being one I keep around all the time as a favorite session beer or to drink when I'm keeping calories down. As a simpler recipe, this leaves room to play and make it my own without overcomplicating things.
