This is actually my second batch of this brew, the first was well liked. The final gravity is off here, so it's going to be even sweeter than intended. I have been doing battle with my gravities since switching to BIAB from extract + steeping, but this is the worst by far. I have been improving my temperature control during fermentation as well as yeast rehydration and pitching with little success. At this point my best guess is that my temperature control during mashing is bad and I am actually mashing much hotter than I think I am, resulting in a lot of unfermentable sugars.

Post tasting update

The flavor is actually very good and roughly what I hoped for. My final gravity may not be as far off as I was thinking. I re-checked my numbers and the intended gravity is higher than I had thought at 1.018 and I believe my readings may not be corrected for my hydrometer being off by .003, which brings it down pretty close.
