Not sure what went wrong with the volume and low gravity (given the volume) on this one. I suspect it was grain absorption and I just started with much lower volume than I should have due to a sloppy sparge job.

The total volume of water needed for this was too much for my pot due to the 1.5 hour boil time. I filled my kettle with the total water volume then transferred 2 gallons to a different kettle. After mashing at 54F for about 1 hour I cold sparged with the remaining water. I believe this is where I went wrong and did not let enough of the water drain through and probably did not rinse the sugars as well due to the cold water and I did not pour slowly enough.

After mashing I boiled for 90 minutes, cooled the wort to 63F, and transferred to the fermenter and pitched the yeast at 63f. I then fermented at 62F for one week, then raised the temperature by about 1 degree F/day for the following week.
