This is my first time brewing this as a 5.5 gallon batch on my Unibrau equipment. Everything went surprisingly smoothly. My original gravity just a bit low and my volume just a bit high, so I hit about what I should have and it's just down to grain absorption and minor boil off rate variances.

Mash Process

I did a full volume, no sparge BIAB mash and boil. I added my grains to the water at about 158F and let it sit for 1 hour at 153F.

Fermentation

I used about 3/4 or a bit more of a packet of S-33 yeast pitched at 64F. I left the temperature controller set to 68F, so the temp was mostly between 67F and 68F for the first 3 days. After that I bumped 1 degree per day up to 72F and left it there until the evening of the 17th when I bumped to 73F and roused the yeast a bit. On 10/17 the gravity was measured at about 1.017, so a good bit higher than intended. I oxygenated the same way I always do currently, with the pump spraying hard into the fermenter from the kettle, which has been fine for other batches.

Post Fermentation

I tasted this prior to carbonation and compared it to the previous batch. The previous was definitely off. Watery and weird flavored. This is heavier bodied than intended, but it works. The flavor is slightly roasty and chocolatey.
